Born and raised in Canada, Giovanni Vallati played in the Ontario Hockey League until the end of the 19-20 season, first for the Kitchener Rangers, due to the performances he showed there he was also considered for the NHL draft (153rd pick), then with the Oshawa Generals. In the last two seasons he played five AHL games and 58 games in the ECHL for Kalamazoo Wings (4G|11A).

"He's a player with great potential. A complete player who can still improve a lot. He is talented both defensively and offensively who can skate and shoot very well: He will be very useful on the power play. He is a player who I think will be useful for the national team as well," sports director Renato Tessari commented on the signing of Vallati.
